(Chinese Styled Sausage)
Serves 2 - 4
200g flat rice noodles (fresh preferred)
2 Kam Yen Jan Chinese sausages, sliced thin
4–5 medium shrimp, peeled and deveined
1 cup bean sprouts
2 eggs
2 cloves garlic, minced
1 tbsp cooking oil
Chives or green onions, cut into 2-inch pieces
Slice Kam Yen Jan Chinese Sausages thinly. Set aside.
Heat wok until very hot. Add sausages and render until lightly crisp.
Add shrimp and minced garlic, stir-fry until shrimp is just cooked.
Add flat rice noodles and pour in sauce mix (soy sauces, oyster sauce, sugar, chili paste). Toss quickly over high heat.
Push noodles aside, crack in eggs, and scramble.
Add bean sprouts and chives, toss everything together briefly.
