(Chinese Styled Sausage)
Serves 2
2 Kam Yen Jan (KYJ) Chinese Style Sausages, sliced thin
3 large eggs
½ small onion, diced
½ bell pepper (any color), diced
1 tbsp oil or butter
2 soft flour tortillas
Optional toppings: salsa, avocado slices, cheese, hot sauce, cilantro
1. Scramble the eggs
In a bowl, whisk the eggs with a pinch of salt.
Heat a pan over medium heat, add a little oil or butter, and scramble until fluffy.
Remove from the pan and set aside.
2. Cook the veggies
In the same pan, sauté onions and bell peppers until soft and slightly caramelized.
Transfer to a plate and set aside.
3. Sear the KYJ Sausages
Add the sliced Kam Yen Jan sausages to the pan.
Cook until golden brown and the edges are crispy — that’s where the magic happens.
4. Assemble the Tacos
Warm your flour tortillas.
Layer the scrambled eggs, sautéed veggies, and crispy KYJ sausage slices.
Add your favorite toppings for extra flavor and texture.
5. Juice it up and enjoy!
A drizzle of hot sauce or a squeeze of lime takes it over the top.
