(Longanisa Cured Sausage)

Serves 2 - 4

Filipino Longsilog

2–3 pieces of Kam Yen Jan Longanisa Cured Sausage, sliced

1–2 cups cooked white rice (preferably day-old for best texture)

1 tablespoon cooking oil

5–6 cloves garlic, minced

1 large egg

Salt & black pepper, to taste

Optional garnish: sliced green onions, tomato slices, or cucumber

  1. Heat a pan over medium heat with a little oil.
  2. Add the sliced sausage.
  3. Pan-fry until the fat renders and the pieces become slightly caramelized and glossy. Once browned, remove from the pan and set aside.
  4. In the same pan, add more oil if needed. Add the minced garlic and sauté until lightly golden and fragrant.
  5. Add the cooked rice directly into the garlic oil. Break up any clumps and toss until the rice is fully coated and heated through.
  6. Season lightly with salt and pepper.
  7. Transfer the garlic rice to a plate.
  8. Add a bit more oil to the pan. Crack in the egg and fry sunny-side-up until the edges are slightly crisp but the yolk remains runny.
  9. Season with a pinch of salt and pepper.
  10. On your plate of garlic fried rice, add the cooked sausage slices.
  11. Place the fried egg on top or on the side.
  12. Optionally garnish with tomatoes, cucumbers, or green onions.
