Chinese Fried Rice

Fried rice is a dish of cooked rice that has been stir-fried in a wok or a frying pan and is usually mixed with other ingredients such as eggs, vegetables, seafood, or meat. It is often eaten by itself or as an accompaniment to another dish. 

(Chinese Bacon + Chinese Sausage)


Serves 4 to 6

Chinese Fried Rice
  • 2 c of cooked white rice (day old rice preferably)
  • ½ c carrot diced and cooked (frozen)
  • ½ c peas cooked (frozen)
  • 2 tbsp minced garlic
  • 2 tbsp sliced green onion
  • 2 links Chinese sausage cut in half horizontally & sliced into ¼ inch thick pieces 
  • 1 strip Chinese bacon sliced into ¼ inch thick pieces
  • 3 large eggs
  • 2 tbsp vegetable oil 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp kosher salt
  • 1/8 tsp black pepper
  1. Prep your rice by using a fork to break apart some of the rice grains.
  2. Mince the garlic. Clean and slice the green onions and set them aside.
  3. Slice the Chinese sausage in half horizontally into bite-sized pieces (about ¼ inch thick).
  4. Slice the Chinese bacon in ¼ inch pieces
  5. Crack two eggs in a large mixing bowl and whisk until combined. Add the day-old rice into this bowl and mix them together.
  6. Mix the soy sauce and oyster sauce in a bowl and set aside.
  7. In a large saucepan over medium-low heat, add the vegetable oil and garlic. Stir around the garlic in the pan for about 30 seconds.
  8. Add the Chinese sausage and cook for about 3-4 minutes.
  9. Add the egg and rice mixture in the pan and continue to stir and cook for about 5-7 minutes or until the rice turns a nice golden yellow.
  10. Add the peas and carrots to the pan and mix until all ingredients are incorporated.
  11. Add the soy sauce and oyster sauce and mix until it's incorporated.
  12. Use your spatula to make an empty circle in the middle of the pan and crack the third egg in the middle. Use your spatula to beat the egg while it cooks. After it becomes a scrambled egg, mix with the rest of the fried rice.
  13. Add the sliced green onion.
  14. Season with salt and black pepper to taste.
