Chinese Clay Pot Rice

Claypot rice, sometimes translated as "rice casserole", is a Chinese traditional dinner eaten widely in Guangdong in Southern China as well as the Chinese communities of Malaysia, Indonesia, Singapore and Thailand.

Serves 4 to 6

Chinese Clay Pot Rice

For Sweet Soy Sauce

  • 2 tablespoons cooking oil
  • 2 shallots thinly sliced
  • 1 thumb sized piece of ginger peeled and thinly sliced
  • 3 tablespoons brown sugar
  • 1 cup soy sauce
  • ¼ cup Chinese cooking rice wine
  • 1 tablespoon sesame oil


For the clay pot rice

  • 2 links of pork sausage 
  • 2 links of liver sausage
  • 1 small piece of Chinese cured pork belly strip (bacon)
  • A piece of cured duck leg
  • 2-3 cups long-grain jasmine rice
  • ½ cup of sliced green onion

Make the Sweet Soy Sauce

  1. Heat a small sauce pot over medium head with cooking oil. When hot, add in the shallot and the ginger and fry until browned but not burnt, approx. 3-5 min. The shallots should be shriveled, darker brown (just not black). Remove the shallots and ginger (as much as you can). 
  2. The remaining oil will now be flavorful. The ginger can be discarded. 
  3. To the oil, add in the sugar, soy sauce and rice wine. Bring to a simmer and then turn the heat to low. Let simmer for 2 minutes. Turn off heat and pour in the sesame oil. Let cool completely before storing in a jar. 


Make the Clay Pot Rice


IF COOKING IN RICE COOKER

  1. Place the rice in the rice cooker pot and wash. Add the amount of water as instructed per package. 
  2. Lay in the Chinese sausages, duck leg, and pork belly strip. Set rice cooker to cook. 
  3. When cooking complete, remove pork belly strip, duck leg, and Chinese sausages to a plate.  Slice pork belly strip and sausages diagonally into about ¼ inch thick.  Shred duck leg meat.
  4. Place all ingredients back to the rice.  Drizzle the sweet soy on top.  Enjoy!! 



IF COOKING ON STOVETOP

  1. Add a few drops of oil to the clay pot (cast iron, enameled cast iron or some kind of heavy-bottomed pot is fine if clay pot is not available), add in rice and water as instructed per package.  
  2. Turn to high heat for a few minutes until it is boiled.  Add the pork belly strip, duck leg and sausages to the top of the rice.  Cover the pot and turn the heat to medium.  
  3. Let it simmer for another ~15 minutes or until the rice is cooked.
  4. Remove the pork belly strip, duck leg, and sausages to a plate.  Slice both pork belly strip and sausages diagonally into about ¼ inch thick.  Shred duck leg meat.  
  5. Place all ingredients back to the rice.  Drizzle the sweet soy on top.  Enjoy!!
